In the woods with Maria Halse

We went mushroom hunting in the woods with Maria to get an insight about her passion.

WHAT ARE YOU COLLECTING AT THE MOMENT?

Late summer and early autumn is chanterelle and bolete season. It’s been a hot and dry summer, so it’s sparse out there, but I’m looking forward to real fall and lots of yellowfoot, which are a lot like chanterelles. It was the first mushroom I learned to identify and is now my absolute favourite.

WHEN AND HOW DID YOU START GATHERING MUSHROOMS?

When I was a child, I used to draw a lot and I drew mushrooms I saw in books. That’s when I became fascinated with their beauty.

I’ve always wanted to learn how to distinguish them from each other and forage the right ones, so last year I went on a guided trip, started studying the different specifies and became a member of a super nerdy facebook group, where we show and determine species.

WHAT’S YOUR NEXT BIG ADVENTURE?

As a birthday gift I was invited on a summer house stay at Djursland and a mushroom foraging trip in the nearby nature. We will be hiking in the breathtaking surroundings, letting the dog loose from her lease, gathering mushrooms and cooking by open fire, drinking campfire coffee and bailey and holding hands looking at the stars. I can't wait!

YOU’RE QUITE AT FOODIE, RIGHT? WHAT’S THE BEST MEAL YOU PREPARED WITH SOMETHING YOU COLLECTED?

The first mushroom toast I made for me and my boyfriend with great, grilled bread, yellowfoot I’d collected from my spot,lots of cream and parmesan and a glass of read wine. Uhm, that’s satisfying.
